To make 1 drink:
4-5 kumquats, sliced in half
4 Thai basil leaves
1/2 tsp sugar
1 oz boiling water
1 oz Seedlip Spice 94
Ginger Beer
Muddle together all of the above (except ginger beer) – this is key: the skin of a kumquat has soooo much flavor that you’ll release with the hot water and muddling. Shake with ice, pour into a glass and top with some ginger beer.
This recipe can easily be batched into a pitcher! Just wait until right before serving to add in the ginger beer.
